Salsa, seltzer...

The last few years have seen a fun little trend: salsa bars. Salsa (before it trumped ketchup as King Condiment), was just a watery red goo, shoved across the counter in a plastic tub. Now, we have choice!

There are numerous Baja Fresh and Burrito Brothers sites that feature fancy little salsa bars, usually offering pickled jalapenos, cilantro, and several flavors of salsa. ("Flavors" is a misnomer. They taste somewhat different, but they're still usually labeled mild, medium and hot).

Even Chipotle, though shunning the all-you-can-ladel station, offers four varieties. (Try the corn, it's delish.)

Sure, you have to trust the sneeze guard to do its job well. But it's about time we had a little variety in our hot sauce selection! I say to the gallows with ketchup, I want more salsa!
